These Power Muffins are adapted from a recipe I found about 5 years ago. Since then, these muffins have been on countless road trips, shipped in care packages, and have fueled many adventures. They are great for breakfast or as an afternoon snack and can be customized to suit your taste. What makes them so "powerful" are the additions you can add. Typically I like to include ground flax seeds, wheat germ, cranberries, raisins, coconut, walnuts, cinnamon, and dark chocolate chips. But it's completely up to you. I like to pack them with fiber, protein, and antioxidants. Additionally, I use the small muffin tins so you can have a few as a snack without feeling full.

There is life for your old surfboard beyond the garage. Your used board could become asphalt or roof tiles, a lifelong passion for a kid in Central America, or money in your pocket. But what your board shouldn't become is landfill waste. There are more options than ever for getting rid of used, vintage, or broken surfboards. And as the surfboard industry begins to make the transition to more sustainable materials, make sure your PU or EPS foam board fully lives out the rest of its life.
