These Power Muffins are adapted from a recipe I found about 5 years ago. Since then, these muffins have been on countless road trips, shipped in care packages, and have fueled many adventures. They are great for breakfast or as an afternoon snack and can be customized to suit your taste. What makes them so “powerful” are the additions you can add. Typically I like to include ground flax seeds, wheat germ, cranberries, raisins, coconut, walnuts, cinnamon, and dark chocolate chips. But it’s completely up to you. I like to pack them with fiber, protein, and antioxidants. Additionally, I use the small muffin tins so you can have a few as a snack without feeling full.

Surfer Jodie Nelson has partnered with Emergen-C Pink, The Keep A Breast Foundation, and Boarding For Breast Cancer to become the first woman to paddle the 39.8 miles from Avalon on the island of Catalina to Dana Point, California as a participant in Ocean Ohana’s Catalina Challenge. Jodie will be the first female to attempt this solo paddle, something only three men have ever accomplished. Jodie’s fundraising goal is $50,000 and funds raised will benefit The Keep A Breast Foundation and Boarding For Breast Cancer.
